^Did you ever think that maybe the controller of these zombies feels the pain of the zombies? And maybe when they die, that's the controller succumbing to the pain? Seems a little far fetched but you never know.

It's possible. Maybe they receive some amount of pain just by controlling them at all? They give up and let the zombie die when it requires too much power and pain to keep them running. Sometimes they endure the pain just to screw us over with a headless zombie.
