What happens to the parts you have acquired but not yet built on the building table when you go down in MOTD multiplayer?

Under almost all circumstances, you won't lose the parts. There is an exception which only applies to the plane parts. If you go down while holding a plane part and bleed to death, then where your body was will lie the plane part you held.

As MMX said. That's why anyone can build the zombie shield, and you don't have to switch parts or anything like that. There are glitches with losing plane parts, though. If you bleed out on the gondola while it's moving, your part stays suspended in mid air, and it's very tricky to get :|
